ingredients
- 2 teaspoons active yeast
- 1 teaspoon sugar
- 1 cup warm water
- 3 cups all purpose flower
- 2 tablespoons dry non-fat milk
- 1 teaspoon salt
- 1/4 cup canola oil
- 1 large diced onion
- 1 medium diced tomato
- 1/4 cup salsa
- 2 tablespoons Greek yogurt
- 1 tablespoon pomegranate molasses,
- 1 teaspoon salt
- 1/2 teaspoon 7-Spices blend
- 1/2 teaspoon black pepper
- 1 pound ground beef
- handful of pine nuts
Method
Step 1
In a mixing bowl, combine yeast, sugar and half a cup of the warm water. Stir to combine and leave it to proof for 10 minutes. In a separate bowl, combine flour, dry milk and salt. After the 10 minutes add oil and flour then start kneading adding the water little by little until a nice consistent dough is formed. Cover the bowl with plastic wrap and let it rise until it doubles in size (approximately an hour).
Step 2
To make the filling, combine all the ingredients and refrigerate until ready to use.
Step 3
Preheat the oven to 400F. Lightly flour your work surface. Divide the dough into 8-12 equal size balls. Work with one ball at a time and cover the rest with plastic wrap. Roll the dough ball into a circle. Place enough of the meat mixture leaving a ¼ inch on the end to tuck in. Pinch the corners to create a square or rectangle. You can also make this round by tucking the dough on top. Note: you may need to drain the meat mixture – if there’s liquid, it will make it soggy and it will stick to the baking sheet. Place the dough on a sprayed baking sheet and repeat until done. Top with a few pine nuts. Bake for 20 minutes or until the dough is light brown in color. Bon appetite!
