Petit Fours Dipped in Chocolote

ingredients

  • 2 cups room temperature Unsalted Butter
  • 1 cup Sugar
  • 2 Eggs
  • 4 cups Flour
  • 1 tablespoon Vanilla Extract
  • Garnish Apricot Jam
  • Garnish Chocolate
  • ground Pistachios
  • Garnish Sprinkles

Method

  • Step 1

    In a stand mixer, whip the butter and sugar until very creamy. Add the eggs and vanilla extract and mix some more. Remove from the mixer and add the flour one cup at a time and mix well using your hands or a spoon. The dough in the end should soft and mushy.

  • Step 2

    You will need a cookie cutter. Place a small amount of the petit four dough, and start piping directly onto a baking tray. Do not use wax paper as the cookie will not stick. It will take approximately 4 trays, and yield between 30-35 pieces per tray.

  • Step 3

    Bake at 350F for 15-18 minutes depending on your oven and whether you like the color light or slightly brown. Brush apricot jam on one side of the cookie, place the other on top, then dip in chocolate and decorate with either pistachios or sprinkles depending on your preference.
