ingredients
- 1 pound piece eye or round beef, free from fat
- 1 1/2 cups yellow bulgur #1
- 1/2 cup wheat bulgur #1
- 1 small quartered onion
- 1 pound fatty ground beef
- 1 large chopped onion
- 1 cup mixed nuts: pistachios, pine nuts, chopped walnuts
- 2 tablepoons allspice
- salt and pepper
Method
Step 1
Place the bulgur in a bowl and splash with tap water and let it rest for ~ 5 minutes until the bulgur is soft. Place the meat in the bowl of a food processor and process for several minutes until the meat is completely pasty and soft and holds together. Remove from the bowl and set aside.
Step 2
Place the bulgur, onion, and spices in the food processor and process until the onion the mixture is uniform. Add the meat, a couple ice cubes and process some more until the mixture is pasty and smooth, a few more minutes. Transfer the kibbeh dough to a bowl and cover until ready.
Step 3
Prepare the filling: brown the ground meat with the onion and spices. Sauté the nuts individually in a little bit of butter or ghee, and then add to meat mixture. **See reel in Instagram on how to roll the kibbeh and insert the meat mixture. Add 1 tablespoon of ghee to a saucepan and sauté the kibbeh until golden brown for ~2 minutes on each side. Garnish with pomegranate seeds. Serve warm!
