ingredients

  • 1 cup mashed potatoes
  • 1 cup warm water
  • 2 tablespoons sugar
  • 1 tablespoon yeast
  • 3/4 cup canola oil
  • 4 tablespoons powdered non-fat milk
  • 1 teaspoon baking powder
  • 3 cups all purpose flower
  • 1 egg wash
  • nutmeg
  • sesame seeds
  • black seeds

Method

  • Step 1

    1. Activate the yeast with the water, add the sugar, and leave it to rest a few minutes. In a medium bowl, place the mashed potatoes and the yeast mixture and mix using a hand mixer. Add the canola oil and mix some more. Finally add the milk powder and the flour one cup at a time. Knead for about 5-10 minutes until smooth. Let the dough rise for about 1/2 hour in a warm place, covered.

    2. Grease a big 14-inch round baking pan or a rectangular Pyrex. Cut the dough into 24 equal sized pieces (or 48 pieces if you like them smaller). 3. Cut the Feta cheese into 24 or 48 pieces. Take a piece of dough and form a flat disk, place a piece of feta cheese inside, pinch it to seal with your fingers and place in the pan leaving about a 1/2 inch space between all the pieces to allow room for the 2nd rise. Repeat.

    4. Preheated oven to 375 F. Brush the tops of each piece of dough with egg wash (sprinkle some nutmeg). Sprinkle sesame and black seeds on top. Bake for 20 to 25 minutes, or until golden brown on top.
