ingredients
- 4 large thinly sliced onions
- 4 tablespoons sunflower oil
- 2 tablespoons unsalted butter
- 1 teaspoon raw sugar
- 4 cups beef stock
- 1 teaspoon thyme (dry or fresh)
- salt and pepper
- 1 sliced baguette
- 1 cup shredded gruyere cheese
Method
Step 1
In a 5 quart pot, heat the oil on medium heat. Add the onions and toss. Cook the onions for 15 minutes or until they soften.
Step 2
Increase heat to medium-high, add the butter and stir. Sprinkle the sugar (to help with the caramelization) and cook until the onions are well browned for ~ 10 to 15 minutes. Finally add the beef stock and thyme, bring to a simmer, cover and cook for 15 minutes. In the meantime, toast the French bread in the oven.
Step 3
To serve, ladle the soup into a bowl. Top with a few pieces of the toast and lots of cheese. Enjoy warm!
