Mock Chicken Salad
RECIPE: <br><br> 3 cups chickpeas (cooked) <br> 1/4 cup sweet pickle relish <br> 1/4 cup minced celery <br> 1/4 cup vegan mayo <br> 2 Tablespoons tahini <br> 2 Tablespoon red onion (minced) <br> 1 Tablespoon dill (minced, packed) <br> 1 Tablespoon scallion or chives (minced, packed) <br> 1 Tablespoon + 1tsp lemon juice <br> 1/4 teaspoon himalayan <br> sea salt <br> cracked pepper to taste <br><br> 1. Mash 90% of the chickpeas (I use a potato masher) <br> 2. Add everything else and stir! <br> 3. Put it on a sandwich or a salad and enjoy. You could also add a tsp or so of mustard to your mix if you'd like!
