For the candied walnuts
- 1 cup California walnuts
- 1/2 cup granulated sugar
- 1/2 cup water

For the sauce
- 5 tablespoons mayonnaise
- 2 tablespoons condensed milk
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice

For the shrimp
- 1 pound shrimp
- 1/4 teaspoon kosher salt
- Freshly ground pepper, to taste
- 1 egg white
- 1 cup cornstarch
- Spring onion, for garnish
- Oil, for frying
Method
Step 1
To prepare the candied walnuts, in a saucepan, combine sugar and water. Bring to a simmer.
Step 2
Add walnuts and cook for 2 minutes, then spread them on a baking sheet to cool.
Step 3
To make the sauce, mix together mayonnaise, condensed milk, honey, and lemon juice. Adjust sweetness to taste and set aside.
Step 4
Season shrimp with salt, pepper, and coat evenly with egg white followed by cornstarch.
Step 5
Heat oil to 350°F and fry shrimp in batches for 3-4 minutes until golden brown and crispy. Drain on paper towels.
Step 6
Toss fried shrimp in the prepared sauce until evenly coated.
Step 7
Garnish with spring onions and top with candied walnuts and serve immedately.
