If you're like us a need a little tropical getaway, make these refreshing Tropical Pots for breakfast! These tropical pots are made with a creamy coconut chia layered topped with a layer of tropical fruits like kiwi, mango and passionfruit.

ingredients

  • 1 cup coconut milk
  • 1/2 cup water
  • 1 cup Muesli
  • 1 lime, juiced and zested
  • 1 cup mango juice
  • 1 passionfruit
  • 3 tablespoons chia seeds
  • 1 kiwi, finely chopped
  • 1/4 pineapple, finely chopped

Method

  • Step 1

    Prepare the bircher by adding coconut milk, water, muesli, lime juice and zest to a bowl and mixing well. Set aside in the fridge for at least 15 minutes to thicken.

  • Step 2

    To make the chia pudding, add mango juice, passionfruit and chia seeds to a bowl and stir well. Set aside for 5 mins, then stir well again and rest for 10 mins to thicken.

  • Step 3

    Assemble pots by adding bircher muesli to the bottom of each jar, topping with mango passionfruit chia pudding and fresh kiwi and pineapple.
