ingredients

  • 1 small yellow zucchini, washed
  • 1 small green zucchini, washed
  • 4 zucchini blossoms, washed
  • 1 ball of burrata
  • handful of mint
  • handful of basil
  • salt, to taste
  • pepper, to taste
  • juice of 1/2 lemon,
  • 1 tablespoon extra virgin olive oil

Method

  • Step 1

    Thinly slice the zucchini into rounds.

  • Step 2

    Tear the zucchini blossoms into 3 or 4 pieces each and remove the stamens.

  • Step 3

    In a mixing bowl dress the zucchini and blossoms with the olive oil, lemon juice and salt, then transfer to a plate.

  • Step 4

    Top with the burrata in spoonfuls, the fresh herbs, another drizzle of olive oil and cracked black pepper. Serve.
