Ginger Spiced Roasted Kabocha Soup
salt and pepper to taste
Roast kabocha with olive oil, salt, pepper. Puree in blender.
Sautee shallot, garlic, fresh ginger on coconut oil. Add stock. Bring to a boil and mix in squash puree. Return into blender and give it a last mix.
Top with toasted pumpkin seeds, sunflower shots and chili flakes.
