Preheat the oven, 325F
Pulse 6 medjool dates in food processor until almost smooth.
Add 1 cup of oatmeal, 1/2 cup of shredded coconut, 1 cup of almost, 2 tablespoon chia seeds, 2 tablespoon coconut oil and 4 tablespoon of maple syrup.
Pulse the mixture, scraping down with a wooden spoon or spatula, if needed until completely mixed.
Roll to an inch balls.
Place balls on parchment-lined baking sheet or split and flatten them to about 1cm in thickness.
Bake 10-12 minutes.
