Duck fat, like Wine, makes everything better. And while I tend to think of pairing wines according to the edible history of what one is eating, that matchmaking can prove elusive with Asian foods. Which is why sticking with a dry, bright Sauvignon Blanc or slightly astringent Pinot Grigio is a safe bet for all but the meatiest of dishes. Betty Liu's @bliu07 scrumptious dish of duck-fat fried scallions, ramen noodles, and medium rare duck breast would also pair nicely with a very dry, chilled Rosé of Grenache, Syrah, or light Cabernet.
