- 2 large leeks
- 5 gold potatoes
- 1 shallot
- 4 garlic cloves
- 1/3 cup white wine
- 32 ounces chicken stock
- Bundle of fresh thyme
- 1 bay leaf
- Olive oil, for finishing
- 1/2 stick butter
- 1/2 cup heavy cream
- Parsley
Method
Step 1
Clean and chop the leeks, shallots garlic and peeled potatoes.
Step 2
Sautee leeks, shallots, and garlic for a few minutes.
Step 3
Add in white wine. Let alcohol evaporate.
Step 4
Add in chicken stock thyme and bay leaf. Simmer until potatoes are tender.
Step 5
Blend until smooth and return to pot. Finish with heavy cream and serve with a drizzle of olive oil, parsley, and a couple cracks of pepper.
