ingredients
For the sauce
- 1/2 cup tequila
- 3 large limes, juiced
- 1 shallot, minced
- Fresh cilantro, chopped
- 1/4 cup heavy cream
- Spiceology Black Magic Seasoning
- 1 stick butter
Method
For the Sauce
Step 1
Sauté shallots and garlic in lime juice and tequila until the shallots caramelize (rehydrate with more tequila as needed).
Step 2
Add in the heavy cream and bring to a simmer.
Step 3
Once the sauce is reduced, add in the remaining ingredients and stir until well combined.

- Spiceology Honey Habanero Rub, for seasoning
For the Chicken
Step 1
Grill until the thighs begin to firm up, then dip in the tequila lime sauce.
Step 2
Continue grilling until the sauce has set and IT hits a minimum of 165 degrees (I like to take mine slightly higher than this). Serve and enjoy.
