For the Homemade Burger Sauce:

  • 1/4 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • 1/2 teaspoon pickle relish
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

For the Sandwich:

  • 4 slices bread (sourdough or white sandwich bread)
  • 2 tablespoons butter, softened
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons homemade burger sauce (see above)
  • 1 small onion, thinly sliced
  • 1 tablespoon olive oil
  • 2 small cooked burger patties (or one large, split in half)
  • 2 slices American cheese
  • 2 slices of crispy smoked bacon
  • 4 to 6 pickle slices
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Method

To make the burger sauce:

  • Step 1

    In a small bowl, mix together mayonnaise, ketchup, mustard, pickle relish, garlic powder, smoked paprika, salt, and pepper. Set aside.

  • Step 2

    Heat olive oil in a skillet over medium heat. Add the sliced onions and cook until soft and caramelized, about 5-7 minutes. Remove from heat and set aside.

  • Step 3

    In the same skillet, season the burger patties with salt and pepper and cook over medium-high heat for about 3-4 minutes per side, or until fully cooked. In the last minute of cooking, place a slice of American cheese on each patty and allow it to melt. Remove from heat.

To make the sandwich:

  • Step 1

    Butter one side of each slice of bread.

  • Step 2

    Place two slices, butter-side down, in a skillet or griddle over medium heat.

  • Step 3

    Sprinkle mozzarella cheese evenly over each slice.

  • Step 4

    Spread a layer of burger sauce on top of the cheese.

  • Step 5

    dd the sautéed onions, burger patties with melted cheese, crispy bacon, and pickles.

  • Step 6

    Top with more sautéed onions and an extra drizzle of burger sauce.

  • Step 7

    Place the remaining slices of bread on top, butter-side up.

  • Step 8

    Cook for 2-3 minutes per side, pressing down slightly, until the bread is golden brown and crispy and the cheese is melted.

  • Step 9

    Remove from heat, slice in half, and enjoy immediately!
