ingredients

  • rolled oats
  • pumpkin puree
  • almond butter
  • maple syrup
  • 1 pitted date
  • 2 tablespoons almond milk
  • Pinch of salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • Pumpkin seeds

Method

  • Step 1

    Place the oats in a large bowl and cover with boiling water, approximately 1/3 cup(80 ml). Add only enough water to cover the oats and let them soak the water for 10 minutes.

  • Step 2

    Chop date into small pieces.

  • Step 3

    Once the oats soften, add the pumpkin puree, almond milk, almond butter, maple syrup, chopped date, spices, and a pinch of salt. Mix to combine.

  • Step 4

    Transfer the mix into a small (single-serve) baking dish and decorate with pumpkin seeds.

  • Step 5

    Bake at 375°F (190°C) for 20 min. Optionally, drizzle a bit of maple syrup over the oats for extra sweetness.
