"Super easy breakfasts have been a must lately, and chia pudding parfaits are one of my favs (especiallyyyy when they’re chocolatey🍫)! Whip the pudding up the night before and in the morning layer it in a bowl or glass with whatever you’re feeling! Method

  • Step 1

    The night before: Pour chia seeds into a bowl, then the coconut milk and maple syrup and whisk together. Cover and place in fridge overnight.

  • Step 2

    When ready to eat: Remove chia seed pudding from the fridge and stir well to break up the seeds. May need to use the back of a spoon to break up the “chunks.” Stir in the cacao/cocoa and a pinch of salt.

  • Step 3

    To serve: Scoop into glasses or bowls and top with almond butter, whipped cream or yogurt, cacao nibs, berries, coconut or whatever else your heart desires! Enjoy!

  • 11 tablepoons Chia seeds
  • 1/4 cup Chia seeds
  • 1 can Light coconut milk
  • 1/4 cup Cacao/cocoa
  • 1/4 cup Maple syrup, omit or decrease if desired

  • Almond butter, optional
  • Yogurt or whipped cream, optional
