Each of them are easy to consume and pair well with other foods. For example, I made a Fig, Radicchio & Triple Crème Brie Salad with Balsamic Reduction! That said, with the right sourcing, you really can “make everything magnifique with fromage!” Each of these cheeses have distinct tastes and textures that make it a delight to compare and contrast. From the silky Triple Cream Brie, to the sharp and nutty, aged Mimolette, or to the rich but delicate Chabichou du Poitou, they each have their own characteristics that engages beyond any standard cow or goat cheese. Because of their specific aging processes, these French cheeses develop unique personalities that make them unlike any other cheeses in the world!"

Recipe Card

ingredients

  • 3 cups mixed leafy greens
  • 1 small head of radicchio
  • 9 figs, quartered
  • 1/8 block Triple Creme Brie, broken into chunks
  • 1 3 oz thinly sliced prosciutto, torn into pieces
  • 1/4 cup Roasted salted pumpkin seeds
  • 3 tablespoon balsamic reduction
  • 2 tablespoon extra virgin olive oil
  • Sea salt, to taste.
  • Cracked black pepper, to taste.

Method

  • Step 1

    Lay a bed of leafy greens and radicchio leaves in a large salad bowl or platter, then alternate between arranging quartered figs and prosciutto on top. (Or toss all together and call it a day haha!)

  • Step 2

    Drizzle with balsamic reduction and olive oil, then garnish with pumpkin seeds.

  • Step 3

    Finish with sea salt and freshly cracked black pepper to taste and serve with more balsamic reduction and enjoy!
