"Carrot Cake Oatmeal Cookies
I'm shooting today, so I whipped up a batch of these cookies so that I'm not tempted to eat junk on set!
Lightly pulse in a food processor or Vitamix :
1 chopped honey crisp apple
1/2 cup baby carrots (or peeled and chopped carrots or carrot shreds)
1 cup gluten free rolled oats
1/4 cup shredded unsweetened coconut
1tbs cinnamon
1tsp nutmeg
4tbs coconut sugar
3/4 cup unsweetened almond milk or whatever you'd like to use.
You'll have a sort of chunky batter. Then pour that batter into a bowl and stir in:
1 cup gluten free oat flour
1tbs baking powder
1/4 cup raisins
Now you'll have a cookie dough! Scoop dollops of the dough onto a baking sheet or pan that is lined with baking (parchment paper) or a silicon mat. Bake on 350 for 30 mins. This makes about 20 cookies."
