  • 8 cups stale bread cubes
  • 1/2 diced medium onion
  • 1/2 cup diced celery
  • 3 tbsp unsalted butter
  • 1 cup chicken broth
  • 3 tbsp chopped parsley
  • 1 tbsp chopped sage
  • 15 tbsp chopped thyme
  • 2 pounds boneless chicken or turkey breasts and thighs
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp chopped parsley
  • 1 tbsp chopped thyme
  • 2 cloves minced garlic
  • 2 teaspoon poultry seasoning
  • 1 1/2 pounds peeled and chopped yellow potatoes
  • 1/2 thinly sliced onion
  • 1 clove minced garlic
  • 1/2 cup heavy cream
  • 1 pound halved brussels sprouts
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey

Method

  • Step 1

    Take one large sheet pan (or two smaller sheet pans) and either lightly oil the sheet pan(s) or line the sheet pan(s) with foil. Preheat oven to 425 degrees. Note: if you don't want the flavors mixing, you can make barriers with the foil.

  • Step 2

    Spread bread in a single layer onto the baking sheet. Place into oven and bake until crisp and golden, roughly 10 minutes and set aside. While bread cubes are baking, cook onion & celery in butter over medium heat until tender. Stir in parsley, sage, thyme, and then the bread. Add the chicken stock and stir until it is absorbed. Place the mixture on one side in an even layer on the sheet pan. As these steps are being done, bring a large pot of water to a boil for the potatoes. Peel and dice the potatoes.

  • Step 3

    Combine butter, parsley, poultry seasoning, garlic, and salt and pepper. If your chicken or turkey has skin, coax the mixture under the skin. If not, just rub the mixture evenly over the chicken or turkey. Place on the baking sheet. Boil the potatoes for until they are slightly tender but still somewhat crisp. Add the onions near the end of cooking and drain. Quickly sauté the garlic in a pan until aromatic and golden.

  • Step 4

    Toss the potatoes with the garlic and salt and pepper. Place in the pan. Pour the cream evenly over the potatoes.

  • Step 5

    Rinse the brussels sprouts halve them. Remove any brown or marred leaves. Mix olive oil, soy sauce and honey and toss the sprouts before seasoning with salt and pepper. Add to the sheet pan.

  • Step 6

    Put the sheet pan in the oven and bake for 45 - 65 minutes, or until chicken or turkey is cooked. Let rest and serve!
