ingredients

  • 2 eggs
  • 1/2 cup maple almond butter
  • 2/3 cup pumpkin purée
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 cup almond flour
  • 2 scoops collagen powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Pumpkin seeds, for toppping

Method

  • Step 1

    Heat oven to 350. Line 8x4 bread tin with parchment paper. Mix together wet ingredients. Add in dry ingredients. Pour into pan. Top with nuts if you’re feeling *extra* like me. Bake for 30-45 minutes or until toothpick comes out clean (baking time will vary by pan and oven). Let cool completely and DEVOUR.
