Almond Flour Pancakes with Blueberries

A Note from Feedfeed

We've never met a pancake we didn't like, but these almond flour pancakes are a new favorite!  Packed with lots of protein and fiber, they are the perfect way to start the day. Plus, you can make a big batch and stash them in the freezer so you always have some on hand!

Serves or Makes: 4


  • 2 cups almond flour
  • 4 eggs
  • 1 large banana
  • 1/ 4 cup almond milk
  • 3 tablespoons coconut oil, plus more for cooking
  • 1 teaspoon baking powder
  • maple syrup, for serving
  • fresh blueberries, for serving


  • Step 1

    Add all ingredients (except maple syrup and blueberries) to a blender, and blend until smooth. Heat a nonstick skillet. Cook pancakes in coconut oil for 4-6 minutes per side, until golden and cooked through. Repeat with remaining batter. Serve with maple syrup and fresh blueberries.
