One more time, I just need this Apricot Plumcot Goat Cheese Tart one more time before summer is gone. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This show stopping stunner looks all kinds of fancy but I assure you it’s laughably simple to make. The easy, press-in brown sugar crust gets filled with the honey kissed, whipped goat cheese filling. It's topped with ripe, juicy stone fruit & a few sprigs of garden fresh thyme. Then drizzled with golden ribbons of honey. The fresh fruit & cookie-like crust combined with goat cheese & herby thyme blurs the lines between sweet and savory, in all the right ways. Worry not if stone fruit season & summer have left your neck of the woods, figs would be a delightful alternative topping for this tart. -@bakingthegoods
