Strawberry Cake
- 1 2/3 cups caster sugar (or granulated sugar)
- 2 1/2 cups all-purpose flour
- 1 1/2 tablespoons baking powder
- 3/4 cup unsalted butter, softened
- 3 large eggs
- 1/3 cup plus 1 tablespoon whole milk
- 1/2 cup strawberry purée (see method below)
- 1 teaspoon vanilla extract

- 1 1/2 cups unsalted butter, softened
- 6 cups powdered sugar
- 1/3 cup strawberry purée (below)

Method
Step 1
Make the strawberry purée: Blend 1 pound (about 500g) of hulled strawberries in a food processor until smooth. Transfer to a saucepan and simmer over medium heat until reduced by half and thickened. Let cool before using.
Step 2
Preheat the oven to 350°F. Grease and line two 8-inch round cake pans.
Step 3
In a stand mixer, combine the sugar, flour, baking powder, and butter. Mix on medium until combined and sandy.
Step 4
Add the eggs and beat for 1–2 minutes.
Step 5
With the mixer on low, slowly add in the milk. Then add the strawberry purée and vanilla extract. Beat until smooth, about 2–3 minutes.
Step 6
Bake for 35–40 minutes, or until a skewer inserted into the center comes out clean. Let the cakes cool completely.
Step 7
Make the buttercream: Beat the butter on medium speed for 5 minutes, until very pale and fluffy.
Step 8
Add the powdered sugar in two additions, mixing well between each.
Step 9
Add the strawberry purée and beat until smooth.
Step 10
Assemble the cake: Slice each cake in half horizontally to create 4 layers. Stack the cakes with layers of strawberry buttercream and strawberry jam in between. Finish with fresh strawberries on top if desired.
