  • Graham Crackers

    Classic banana pudding uses nilla wafers. This recipe uses graham crackers instead. The moisture from the pudding helps soften the graham crackers into a cake-like texture as the pudding chills.

    Using both variations of marshmallow and toasting them with a torch helps reach the ultimate toasty s'mores flavor.

  • 1 package vanilla pudding mix
  • 2 cups cold whole milk
  • 1 1/2 cups heavy whipping cream, divided
  • 1/2 cup semisweet chocolate chips
  • 2 bananas, sliced
  • 10 graham crackers
  • 1 (7-ounce) jar marshmallow fluff
  • 3/4 cup mini marshmallows

Method

  • Step 1

    Whisk the pudding mix with cold milk in a large bowl until well combined. Chill in the fridge for at least 20 minutes or until completely set.

  • Step 2

    Whip 1 cup of the heavy whipping cream until it reaches stiff peaks.

  • Step 3

    Heat the remaining 1/2 cup of heavy cream until steaming hot and pour it over the chocolate chips. Mix until well combined and smooth.

  • Step 4

    Fold the whipped cream and ganache into the chilled pudding.

  • Step 5

    In a trifle dish or deep rectangular pan, add 1/2 of the chocolate pudding.

  • Step 6

    Break the graham crackers into quarters and add a layer on top of the pudding. Add the sliced bananas and scatter small spoonfuls of marshmallow fluff.

  • Step 7

    Top with the remaining pudding and use an offset spatula to create a smooth layer.

  • Step 8

    Add another layer of graham cracker pieces.

  • Step 9

    Chill for at least 3 hours or until ready to serve.

  • Step 10

    Before serving, top the pudding with dollops of marshmallow fluff and mini marshmallows. Torch the top to create the toasted marshmallow effect.
