These peanut butter chocolate chip cookies are my family's favorite dessert that I bake. They are made with ingredients like peanut butter and coconut sugar for a healthier, vegan, and gluten free cookie, although you won't taste the difference. Definitely give this recipe a try!

ingredients
- 3 tbsp peanut butter
- 3 tbsp coconut oil, melted
- 3/4 cup coconut sugar
- 1/2 teaspoon vanilla extract
- 2 tbsp plant milk of your choice, (I used oat)
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup plus 1 tablespoon gluten free flour blend, (I used Bob's Red Mill 1:1 GF flour)
- 1/2 cup dark chocolate chips
- coarse salt, for sprinkling
Method
Step 1
Preheat your oven to 325 degrees Fahrenheit.
Step 2
In a medium bowl add the peanut butter, melted coconut oil, and vanilla. Whisk until smooth.
Step 3
Add the coconut sugar and whisk again.
Step 4
Pour in your plant milk of choice, whisking until the mixture is smooth.
Step 5
Add the salt, baking soda, and gluten free flour. Fold to form a dough.
Step 6
Fold in the dark chocolate chips.
Step 7
Use a 1 1/2 tbsp sized scoop to scoop the cookie dough onto a parchment lined cookie sheet.
Step 8
Bake the cookies for about 15 minutes or until they are golden brown on the edges.
Step 9
Sprinkle with coarse salt to taste.
