Flourless Chocolate Cake
- 4 oz dark chocolate
- 8 tbsp (1 stick) butter, unsalted
- 1/2 cup dark cocoa powder, unsweetened
- 3/4 cup white sugar
- 2 teaspoons instant coffee
- 1 teaspoon vanilla extract
- pinch of salt
- 4 eggs

- 3/4 cup heavy whipping cream, cold
- 2 teaspoons instant coffee
- 1 teaspoon vanilla extract
- pinch of salt
- 1 tablespoon powdered sugar, plus extra for dusting
- berries, for topping
Method
Step 1
Preheat your oven to 350 degrees Fahrenheit. Grease a small cast iron skillet or 8" cake pan with nonstick spray.
Step 2
In a large glass bowl, add the chocolate and butter. Melt in the microwave until combined and smooth.
Step 3
Add cocoa powder, sugar, coffee, vanilla, salt, and mix to combine.
Step 4
Add the eggs, 1 at a time, mixing after each addition until a smooth batter forms.
Step 5
Transfer the batter into your prepared skillet or pan, and bake for about 20 minutes or until the cake is set and has a crackly top.
Step 6
In a medium bowl with a hand mixer or in the bowl of a stand mixer, add the cold cream, coffee, vanilla, salt, and powdered sugar.
Step 7
Whip all of the ingredients together until stiff peaks form.
Step 8
When the cake has cooled off and you are ready to serve, dust it with powdered sugar. Add dollops of the coffee whipped cream and top with fresh berries. Enjoy!
