Crust

  • 2 1/4 cups graham crackers, crushed finely
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1 pinch salt
  • 10 tbsp unsalted butter, melted

  • 4 8 oz blocks of cream cheese
  • 1/3 cup sour cream
  • 1 cup powdered sugar
  • 1 tbsp vanilla extract
  • 0 1/2 cup heavy whipping cream, cold
  • 1/3 cup unsweetened pumpkin puree
  • 1 1/2 tsp pumpkin spice

Whipped Cream, for topping

  • 3/4 cup heavy whipping cream, cold
  • 1 tbsp powdered sugar
  • 1 teaspoon vanilla extract

Method

Preperation

  • Step 1

    Preheat your oven to 325 degrees Fahrenheit.

  • Step 2

    In a large bowl, mix together the crushed graham crackers, sugar, cinnamon, and salt.

  • Step 3

    Add melted butter and mix to combine.

  • Step 4

    Press the crust mixture into a springform pan, creating a layer on the bottom, and then continuing to firmly press crust up the sides.

  • Step 5

    Bake the crust for 8-10 minutes, or until golden brown. When it comes out of the oven, let the crust cool completely, about an hour.

Filling and Assembly

  • Step 1

    In a large bowl with a hand mixer or in the bowl of a stand mixer, add the cream cheese, sour cream, powdered sugar, and vanilla. Whip together until smooth.

  • Step 2

    In a separate bowl, whip the heavy cream until stiff peaks.

  • Step 3

    Fold the whipped cream into the cheesecake mixture until just combined.

  • Step 4

    Add half of the cheesecake mixture to a separate small bowl and fold in the pumpkin puree and pumpkin spice.

  • Step 5

    Add alternating scoops of the vanilla and pumpkin spice batters to the cooled crust, and use an offset spatula to smooth the surface.

  • Step 6

    Cover the cheesecake with saran wrap and chill overnight to set.

  • Step 7

    To make the whipped cream topping, add the cold heavy whipping cream, powdered sugar, and vanilla to the bowl of a stand mixer or to a large bowl with a hand mixer. Whip until stiff peaks form.

  • Step 8

    Release the cheesecake from the springform pan. Before serving, use a piping bag to add swirls of the whipped cream on top of the cheesecake. Slice and enjoy!
