ingredients
Cherry Chip Cookie Dough
- 6 tbsp unsalted butter, softened
- 3/4 cup white granulated sugar
- 1/8 tsp almond extract
- 1 tsp vanilla extract
- 1 egg yolk
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cup all purpose flour
- 3/4 cup fresh red cherries, pitted and chopped
- 1/3 cup white chocolate chips

Dark Chocolate Cherry Brownies
- 10 tbsp unsalted butter, cut into small pieces
- 1/2 cup chocolate chips, semisweet or dark work best
- 1 cup white granulated sugar
- 2 eggs
- 1 tbsp strong coffee, I used cold brew
- 1/8 tsp cinnamon
- 1/4 tsp salt
- 1 cup all purpose flour
- 1/4 cup dark cocoa powder
- 1/2 cup fresh red cherries, pitted and chopped
- 1/2 cup chocolate chips, semisweet or dark work best
Method
Cookie Dough
Step 1
Preheat your oven to 350 degrees Fahrenheit. Prepare an 8x8 pan by lining it with 2 pieces of parchment paper, leaving overhang for easy release of the brookies after baking.
Step 2
In a medium bowl or bowl of a stand mixer, add the softened butter and white sugar.
Step 3
Cream until light and fluffy. Add extracts and egg yolk. Mix to combine.
Step 4
Add the baking soda, salt and flour. Mix until a crumbly texture forms.
Step 5
Mix in the chopped cherries until the dough begins to come together and reach a light pink color with pieces of cherry broken up throughout the dough.
Step 6
Using a rubber spatula, fold in the white chocolate chips. Set cookie dough aside.
Brownie Batter, Assembly, and Baking
Step 1
In a large, microwave safe bowl, add the chopped butter and chocolate chips.
Step 2
Melt in 30 second increments, whisking until smooth.
Step 3
Whisk in sugar, then eggs one at a time.
Step 4
Whisk in coffee.
Step 5
Fold in cinnamon, salt, flour and cocoa powder until smooth.
Step 6
Fold in the chopped cherries and chocolate chips.
Step 7
To assemble the brookies, add alternating scoops of the cherry cookie dough and brownie batter to the prepared pan (this will create a marbling effect of the two batters).
Step 8
Bake in the preheated oven for about 30 minutes or until the brookies begin to turn golden brown on the surface. When they begin to brown on top, cover the pan with a sheet of tin foil and continue baking until the brownie sections are just firming up and the cookie sections are a light golden brown.
Step 9
Let the brookies cool on a cooling rack then release them from the pan. Slice into 16 pieces (or as many as you'd like) and enjoy!

Can I add cherries to brownie mix?
Yes! Chopped fresh cherries are a perfect mix in for brownie batter. Think of them like your typical walnut or chocoalte chip mix-in, but with a fresher spin.
Ingredient Notes
Fresh Cherries
During recipe testing, I found that fresh cherries led to the brightest cherry flavor and prettiest pink color. Frozen cherries led to a much more purple cookie dough and milder cherry flavor.
Strong Coffee
I use cold brew, but instant coffee or espresso works here as well. The coffee helps enhance the chocolate flavor in the brownies. If you don't have it or would prefer to leave it out, that's ok too.
