- 2 ounces (56g) cold cream cheese
- 3 tablespoons (34g) granulated sugar
- 1 teaspoon vanilla extract
- Pinch of fine salt
- 1 cup (240ml) cold heavy cream
Method
Step 1
In the bowl of a stand mixer fitted with the whisk attachment, combine the cream cheese, sugar, vanilla extract, and salt. Mix on low speed until well combined.
Step 2
Increase the speed to medium and whip until the mixture is smooth and creamy, scraping down the sides of the bowl as needed, about 2 minutes.
Step 3
With the mixer on low speed, gradually add the cold heavy cream in a slow, steady stream. Stop the mixer and scrape down the sides of the bowl and the whisk once all the cream has been added.
Step 4
Increase the speed to medium and continue to whip until the mixture forms medium peaks. Finish whipping the cream by hand using the whisk attachment.
Step 5
Use immediately or store covered in the refrigerator for up to 4 days.
