ingredients
- 2 tablespoons coconut or avocado oil
- 1 medium onion, chopped
- 5 garlic cloves, minced
- 2 lbs lean ground beef
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 2 tablespoon Worcestershire sauce
- 2 cans (10 oz) Tomato Love Mild Diced Tomatoes + Green Chilies
- 1 can (10 oz) Red Gold Canned Tomato Sauce
- 2 dried bay leaves
- 1 cup beef stock
- 2 cups water
- 2 cups dried elbow pasta
- 2 cups cheddar cheese, shredded
- Fresh parsley, for garnish
Method
Step 1
Heat oil in a large Dutch oven over medium-high heat.
Step 2
Add the onions and minced garlic and sauté until softened and translucent.
Step 3
Add ground beef and season generously with salt and pepper. Add in paprika, oregano, and parsley. Stir frequently and continue to cook until ground beef is browned.
Step 4
Add cans of tomato love mild diced tomatoes + green chiles and red gold tomatoes tomato sauce. Mix well to combine. Add bay leaves, Worcestershire sauce, beef broth and water.
Step 5
Bring to a simmer and then add elbow pasta. Cover and let simmer for another 15 mins or until noodles are al dente, stirring occasionally.
Step 6
Remove from heat and finally add cheddar cheese. Garnish with fresh parsley and serve immediately.
