Ingredients Large Shredded White Cabbage (soccer ball size). Don't use hard middle (keep aside outer leaves for later). Fine Celtic or Himalayan Sea salt (about 1% of Cabbage weight) Vegan Probiotic capsules or Powder (amount varies according to amount of cabbage used). Grated carrots 1 thinly sliced red capsicum 1 whole chili 2 peeled and grated apples About 30 whole peppercorns 2-3 tsp turmeric powder A tsp of fresh grated ginger 2 cloves of crushed / sliced garlic 3 ground up cardamom pods Try to use only organic ingredients. Method
Sterilise Jars – Let drip dry. Do not wipe with tea towel.
Shred cabbage. Add Salt and massage until lots of water starts to come out of cabbage. Usually takes around 10-15 minutes.
Add apples to cabbage. Keep massaging. Gradually Add all the rest of the seasonings and keep massaging (it's a good arm workout).
Add Probiotic capsules. You should now have quite a bit of water in the mixture. Taste your sauerkraut. **Throughout this process, keep everything sterile and don't use anything metal!**
If it tastes great now wait until it ferments.
Take your sterilised glass jars and push mixture inside the jar making sure you push down so the liquid comes over the mixture. Once you have filled up to almost the top of the jar fold your discarded but cleaned outer cabbage leaves and fold them until they fit in the top of the jar (the cabbage leaves are your seal to push down the shredded cabbage. Make sure the liquid comes to the top of the jar. The contents must be fully covered. Place lid on the Jar. Place on a tray in warm place and on a baking tray to avoid later mess.
This is where the magic happens. You need to keep it in a warm place for around 3-5 days (depending how warm it is). Every morning and evening you need to “burp” your jar (loosen the lid until you hear the gas coming out) then retighten. Once the gasses stop coming out of the mixture it is ready to go in the fridge. Try to leave it for around 2 weeks until you start to eat (if you can wait that long). The longer you leave it the better it is. Try experimenting with your favorited herbs and spices.
