Fiddlehead, Bacon And Portobello Mushroom Pasta
Yum yum yum yummy. I would have made this with portobello slices but my big baby (read husband) doesn't like the look of mushrooms. <br> 1 package fiddleheads<br> 4 slices bacon, chopped<br> 2 portobello mushrooms, chopped or sliced<br> 1 package pasta<br> 1 garlic clove<br> 1/4 cup Parmesan grated<br> 1 tbsp butter<br> <br> 1⃣Wash and blanch fiddleheads. this is very important because raw unwashed fiddleheads can cause cause food poisoning. See my previous post for instructions.<br> 2⃣ Boil water and cook pasta.<br> 3⃣Meanwhile sauté bacon until cooked, add butter garlic and fiddleheads. Sauté for about 5 mins and add mushrooms. Sauté until soft and serve on pasta. <br> J ate the whole plate ....minus the fiddleheads lol ✔️ok 6 months but try to get nitrate free or low sodium bacon. For babies under a year be careful how much bacon you give because of salt. Portobello slices would also be easier to grab for younger tots.
