Every year for Thanksgiving , I do my best try a new dish. As I am picking my recipes, I make sure to find ones that I can prep (at least) one day ahead. This way I am able to enjoy the day with my friends and family with most of the heavy lifting already done. This year, I am replacing my mom's classic mashed potatoes with this Double-Layered Mashed Potato Casserole with Crispy Leeks. You can easily make most of this recipe a day prior to the big day. I love this potato casserole, because it is best of both worlds as it is made by layering sweet potatoes with russet potatoes. To make it even more amazing, I splurged by sprinkling it with fried leeks. However, if you are not into frying, feel free to swap leeks with a cup of your favorite shredded cheese.
