ingredients

  • 2 cups all purpose flour
  • 3/4 warm water
  • 2 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 diced, onion
  • 1 cup mushrooms (mix of white and shiitake)
  • 1 pack crumbled pan fried tofu
  • 1/2 diced red bell pepper
  • ginger powder
  • garlic powder
  • cayenne powder
  • salt/pepper

Method

For the dough:

  • Step 1

    Mix flour and salt together. Slowly add water and combine the dough.

  • Step 2

    Once the dough has incorporated all of the flour and isn’t sticky, knead for 3-5 minutes.

  • Step 3

    Tips: Add more flour if the dough feel too sticky. Wet your fingers and kneed if the dough feels dry (don’t pour water). Let dough rest as you prepare the filling

For the filling:

  • Step 1

    Saute onions and serrano peppers in a wok with a few tsp of oil

  • Step 2

    Add veggies to mixture and saute

  • Step 3

    Add ginger, garlic, cayenne, salt/pepper

  • Step 4

    Add tofu crumbles, if you desire

  • Step 5

    Once the filling is cooked, set aside to cool

For the dumpling:

  • Step 1

    Dust some flour onto your counter (or work surface) where you’ll roll out dough

  • Step 2

    Pinch off a tablespoon-sized ball of dough from the bulk dough

  • Step 3

    Roll out the dough into circles roughly 3-4” in diameter, and thin (not too thin that it rips easily)

  • Step 4

    Add a 1-2 spoonfuls of filling to the middle of each dough circle

  • Step 5

    Wet the edges of the dough with water using your fingers. Pinch together and pleat the edges in half to create a dumpling

To pan fry dumplings

  • Step 1

    Pan/Skillet over medium-high heat. Add some oil to pan to coat the bottoms evenly

  • Step 2

    Place dumplings with bottom side down and let it cook for 2-3 minutes in the oil

  • Step 3

    Add some water (~1/2 cup) to the pan and cover with a lid to steam for 6-8 minutes. Steam until water has evaporated.

  • Step 4

    Dumplings are done when they don’t stick to the bottom and can be moved around pan easily.

  • Step 5

    If desired, Add a small amount of additional oil to the pan and continue cooking to create the crispy signature bottom of the dumpling

To steam dumplings

  • Step 1

    You can also steam dumplings in a steamer basket for 8-10 minutes

  • Step 2

    Freeze any uncooked dumplings you have made for later enjoyment
