These olive oil cookies are gooey on the inside and crunchy the outside. They are stuffed with gooey chocolate chip cookies AND are completely grain-free and vegan! What makes these cookies unique is that they are made with olive oil and aquafaba, the liquid from the chickpea can. Use the leftover aquafaba liquid to make a meringue.

ingredients

  • 4 tablespoons aquafaba, (liquid from a can of chickpeas)
  • 1/3 cup olive oil
  • 1 teaspoon vanilla extract
  • 3/4 cup coconut sugar
  • 1 1/2 cups chickpea flour
  • 1/2 teaspoon baking soda
  • 1 cup chocolate chips

Method

  • Step 1

    Preheat oven to 350 degrees.

  • Step 2

    Add aquafaba to a bowl and whisk until frothy. Add the rest of the wet ingredients to a bowl. Mix until just combined.

  • Step 3

    Pour in dry ingredients not including chocolate chips. Mix until just combined. Lastly fold in chocolate chips.

  • Step 4

    Form 9-10 cookies on a lined sheet pan. Bake for 11-13 minutes. I baked mine for 12 on the dot.
