Csa Healthy School Lunch
#healthyschoollunch 152/196 - we have belonged to a #csa for nearly 10 years and I love that I know the #farmers who grow our food, know that my kids eat the same food as their kids do and really like that a surprise box of food turns up on my doorstep each week (among many other reasons I love our #local #farm). This week we got a lot of zucchini, apples and carrots (and zucchini doesn't always get a warm reception around here) so I decided to grate them and make them into muffins for lunch. The #vegan #wholewheat batter is barely sweet - used a bit of maple sugar in them - and they should be a hit for lunch. Packed a pair of muffins alongside some #raw veggies, a little pot of umeboshi, lime and shallot dressing for dipping (from an @ottolenghi sprout salad recipe in #plentymore - so so good in the salad and for dipping). Finally, to be sure the #healthykids get some #protein to sustain them through the afternoon, a #dairyfree banana, berry and #hemp #smoothie for one kid and a bottle of mango lassi for the other. We popped into a little Indian restaurant for dosas for lunch today and my big daughter was torn between ordering a salted lassi and a mango lassi. The lovely proprietor offered to make her an unsweetened mango lassi, it was perfect and she declared that she had to have this for #lunch on Monday. Luckily making smoothies on demand is one of my powers and it will be packed in her bag tomorrow morning.
