ingredients
- 2 packages of Annie's Vegan Mac and Cheese
- 4 tablespoons vegan butter
- 2 tablespoons all purpose flour
- 2/3 cup plant milk of choice
- 1/4 cup vegan parmesan cheese, grated
- 1/2 cup Panko breadcrumbs
- 1 tablespoon finely chopped parsely
Method
Step 1
Preheat oven to 425F. Place foil muffin liner in each of 12 regular-size muffin cups. Spray liners with nonstick cooking spray.
Step 2
Cook macaroni in large saucepan as directed on package. Drain and set aside.
Step 3
Melt 2 tablespoons of vegan butter in the same saucepan over low heat. Whisk in flour and stir for 1 minute. Slowly beat in nondairy milk and cook for 1 to 2 minutes, or until thickened and smooth. Add cheese seasoning from Annie’s Vegan Mac and stir for 1-2 minutes, or until blended. Add macaroni into the saucepan and mix well for 2 minutes or until combined. Remove from heat.
Step 4
Microwave remaining 2 tablespoons butter uncovered in a microwavable bowl on High for 30 to 60 seconds or until melted. Stir in breadcrumbs, vegan parmesan, and parsley into bowl for 1-2 minutes, or until smooth.
Step 5
Divide macaroni mixture evenly among muffin cups. Gently press. Spoon bread crumb mixture on top.
Step 6
Bake 15 to 20 minutes or until bread crumb mixture is golden brown. Let stand 5 minutes before serving.
