Coconut Oat Pancake with macerated Banana cream

ingredients

  • 1 Egg
  • 3 Coconut flour
  • 5 1/2 Oat flour
  • 2 Hemp hearts
  • 1 Maple syrup or sweetener or choice
  • 1/2 teapsoons Vanilla extract
  • 1 Baking powder
  • 1 teaspoon Apple cider vinegar
  • 1/4 cup Oat milk or milk of choice
  • pinch of Salt

Method

  • Step 1

    In a mixing bowl whisk one egg with milk and maple syrup (or sweetener).

  • Step 2

    Add to the bowl oat flour, coconut flour, baking powder, baking soda. Add 1 tsp apple vinegar let react for 10 seconds or so.

  • Step 3

    Whisk everything to combine into a smooth batter. Add hemp hearts and mix well. Don't worry if the pancakes batter has a thicker consistency than normal pancakes. This is completely normal when cooking with coconut flour.

  • Step 4

    Let the pancake batter rest for 5 minutes. Do not skip this step.

  • Step 5

    Into a hot pan add some butter and spoon 1/3 cup of pancakes batter. Cook the pancakes on medium heat on both sides.

Macerated Banana cream

  • 2 chopped Ripe bananas
  • 1/3 cup Coconut cream
  • 1/4 teasopon Cardamom powder
  • 1 teaspoo Coconut sugar (If the bananas are not too ripe you can add more sugar)
  • pinch of Salt

Macerated Banana Cream

  • Step 1

    -Cut the banana into thin slices and put them in a small saucepan. Add the coconut sugar and cardamom powder on top of the slices and mix to coat the banana pieces

  • Step 2

    On low flame, let the bananas and sugar sit for about 5-6 minutes. Add the coconut cream to the bananas and mix well. Heat the mixture gently over a medium heat for about 5 minutes without boiling

  • Step 3

    Once the bananas have cooked down completely remove from flame. Once the mixture has cooled, blend it into a smooth puree. Store in an air tight container.
