Herb Roasted Tomatoes
You found some soft, wilted veggies in your fridge and you have no idea what to do with them. All I can say is don’t toss them out. A lot of times we #waste so much food because we simply have no idea what to do with them. I will teach you with a few simple and easy tips on how to rescue your soft veggies from last week. Today, I had some #organic Roma #tomatoes in my fridge which had gotten soft and mushy and I just rescued them for this evening’s dinner.

Do you use red lentils in your meals? They are perfect for slow cooking recipes like stews and soups. Nutritionally, red lentils are rich in folic acid, magnesium, potassium and fiber. They are one of the top plant based proteins: 1 cup has about 18g. Lentils are delicious, super easy to cook with and very affordable. Tip: always soak them prior to cooking, drain the soaking water and cook with fresh water or vegetable stock.
