ingredients

  • One whole chicken cut into 16 pieces
  • 4-5 large white onions, thinly sliced
  • 4-5 medium sized potatoes, quartered
  • 12-15 cloves garlic
  • 5-6 green chilies
  • 1 large piece of ginger
  • 1 cup yogurt
  • Cinnamon stick
  • Star anise
  • Black cardamom whole
  • Green cardamom
  • Whole black pepper
  • Cloves
  • Salt to taste
  • Sliced lemon
  • Green chili and cilantro to garnish

Method

  • Step 1

    Mince the garlic/ginger and green chilies in a food processor, keep aside.

  • Step 2

    In 3/4 cup oil, brown the sliced onions. When onions are browned, (reserve some for garnish) then add in the chicken.

  • Step 3

    Cook chicken until the color changes. Add in the ginger/ garlic paste. Mix well then add in the salt.

  • Step 4

    Add in potatoes and the whole spices. Mix to combine. Cover and let it cook until half done. Add in yogurt. Mix well. Cover until cooked through.

  • Step 5

    Boil rice with mint, salt and dry spices. Boil rice until half done. Drain rice over a strainer. Do not overcook the rice as it will continue cooking once we add it to the chicken.

  • Step 6

    Cover the chicken with boiled rice. Mix yellow powdered food color in 2-3 tbsp milk and pour over the rice. Add green chilies, lemon slices, cilantro and some browned onions on top.

  • Step 7

    Cover and lower the heat to a low for around 15-20 minutes. When you remove the lid you should see it steaming through. Serve with raita and salad.
