Recipe Card

ingredients

  • 1 box Annie's Vegan Mac and Cheese
  • 1 (8 ounce) container vegan cream cheese, room temperature
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 package vegan bacon
  • 6 large jalapeños, halved from the stem down
  • 1 cup shredded vegan cheddar
  • 1/2 cup jalapeño flavored kettle cooked chips, crushed

Method

  • Step 1

    Preheat oven to 400°F

  • Step 2

    Cook Annie’s Organic Vegan Mac according to package instructions.

  • Step 3

    While still warm, add cream cheese to the Mac. Turn on low heat, if necessary, continuously stirring until the cream cheese is melted.

  • Step 4

    Add salt, pepper, garlic powder. Remove from heat.

  • Step 5

    If wrapping poppers in bacon, do not cook the bacon. If adding bacon pieces to the poppers cook the bacon as directed on the package. Once fully cooked, dice into small pieces, and stir into Mac.

  • Step 6

    Cut jalapeños in half starting at the stem. Remove seeds and discard. Don’t forget to wash your hands thoroughly after touching seeds!

  • Step 7

    Fill jalapeños with Mac and sprinkle shredded cheese on top.

  • Step 8

    Wrap in bacon (if bacon is not already added to the Mac). Place in a baking sheet seam down.

  • Step 9

    Bake for 15-18 minutes.

  • Step 10

    Remove from the oven, and top with crushed chips on top for an added crunch!
