Malted Milk + Dark Chocolate Cookie

Classic crispy chocolate chip cookies are always a winner! These cookies are made with malted milk powder and dark chocolate chunks. We recommend pairing with a tall glass of milk.

ingredients

  • 125 grams unsalted butter, room temperature
  • 115 grams light brown sugar
  • 110 grams caster sugar
  • 1 medium egg
  • 1 teaspoon vanilla extract
  • 220 grams self raising flour
  • 1/2 teaspoon fine salt
  • 150 grams dark chocolate, roughly chopped
  • 25 grams malted milk powder

Method

  • Step 1

    Preheat oven to 200C/180 fan. line a large, flat baking tray (or two) with parchment paper

  • Step 2

    In a large bowl, mix the butter and sugars together until pale and fluffy 3. add the egg and vanilla extract and mix well

  • Step 3

    Add the egg and vanilla extract and mix well. Mix the dry ingredients (flour, malted milk powder + salt) together in a separate bowl and then sift into the butter mixture and mix until it comes together into a soft dough

  • Step 4

    Add the chopped choc and mix until properly incorporated

  • Step 5

    Break off walnut sized pieces of dough, roll into a ball and place on the baking sheet(s) - don't forget to leave gaps as the cookies will spread as they cook!

  • Step 6

    Bake (in batches if needed) for 7 mins for the perfect soft cookie. cool on the tray for 10 mins before moving to a wire rack until properly cool.
