Beer Can Cabbage
1 large head of cabbage, core removed
Salt, to taste
Black pepper, to taste
Pale ale beer, in a can
1 tablespoon tamarind paste
Heat a grill to medium-high.
Add tamarind paste to 1/2 cup warm water. Let the paste dissolve.
Remove any excess cabbage in order to fit a beer can halfway inside the cabbage. Pour half the beer and the tamarind mixture into a spray bottle. Oil, salt, and pepper the cavity and the exterior of the cabbage.
Place cabbage on the beer can and place on the grill. Close the grill lid. Every 15-20 minutes, spray the cabbage with the tamarind beer mixture. Cook the cabbage for about 1 hour and 15 minutes. Remove from grill, slice, and serve warm.
