Baked Ricotta And Manchego With Kalamata Olives And Herbs

Drain the ricotta in a fine sieve for 30 minutes. Meanwhile, dice pitted kalamata olives and chop fresh thyme. In a large bowl combine the ricotta, shredded manchego, 1 egg, diced olives, fresh thyme and a pinch of salt. Once thoroughly combined, pour the mixture into a gratin dish and baked at 375 for about 50-55 minutes (or until browned and slightly jiggly).
