ingredients

  • 1 tablespoon extra virgin olive oil Olive Oil
  • 1 small Shallot, chopped
  • 1 clove Garlic, minced
  • 1 (12 ounce bag) Cascadian Farms Organic Riced Cauliflower
  • 1/4 cup Sun Dried Tomatoes in Oil, drained and chopped
  • 2 tablespoon Fresh Parsley, chopped
  • 1 teaspoon dried Basil
  • 1/4 teaspoon Red Pepper, crushed
  • Kosher Salt, to taste.

Method

  • Step 1

    Heat oil in a large skillet over medium-low heat.

  • Step 2

    Add shallots and garlic. Cook, stirring occasionally, for 2 minutes until softened.

  • Step 3

    Add riced cauliflower, stirring to combine. Cover and cook, stirring occasionally, for 9 to 12 minutes. You want the cauliflower rice to be tender-crisp.

  • Step 4

    Remove from heat and stir in the sun dried tomatoes, parsley, basil, and crushed red pepper.

  • Step 5

    Season with salt to taste. Serve immediately.
