Dough

  • 2 cups oat flour
  • 1 cup whole wheat flour
  • 1 1/2 cups all-purpose flour, divided
  • 2 teaspoons dried yeast
  • 1/2 teaspoon sugar
  • 1/4 salt
  • 3 tablespoons olive oil
  • 1 1/4 cups water
  • 2 tablespoons semolina

Tomato Sauce

  • 1 1/2 cups canned chopped tomatoes
  • 6 cloves garlic, chopped
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • Salt and pepper, to taste

  • 1 cup cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded
  • Toppings of choice (such as pepperoni, fresh basil, etc.)

Method

  • Step 1

    In a large mixing bowl, add the water, sugar, yeast, and 2 tablespoons all purpose flour. Stir and let it sit for 5-10 mins until frothy.

  • Step 2

    Add the oat flour, whole wheat flour, remaining all purpose flour, olive oil, and salt to the bowl and stir to combine. Once a loose dough begins to form, use your hands to knead the dough until smooth and elastic (about 8-10 minutes). Cover the dough and let rise for 30-45 minutes until doubled in volume.

  • Step 3

    Meanwhile, make the sauce. In a sauce pot over medium-low heat, add the tomatoes and spices. Bring to a simmer and continue cooking over medium-low heat until the sauce has thickened. Taste and adjust seasoning and set aside.

  • Step 4

    Preheat oven to 450-500ºF. Drizzle a little oil into a pizza pan and dust with semolina.

  • Step 5

    Divide dough into 3 parts and place one into the middle of the pan, using your fingers to spread it out as evenly as possible.

  • Step 6

    Spread about 1/4 cup-1/2 cup of sauce over the dough. Top with your choice of toppings and sprinkle generously with cheese. Bake for 15-18 minutes until crust is golden and cheese is bubbling. Repeat with remaining dough.
