ingredients
- 500 gram (1.1 pound) pasta
- 450 gram (1 pound) shrimp, peeled and deveined
- 300 gram (12 oz) fava beans, shelled and skinned
- 4 tbsp olive oil
- 20 gram (1 oz) unsalted butter
- 4 garlic cloves, finely chopped
- 1/2 tsp crushed chili
- 50 (1/4 cup) white wine
- 50 milliliter chicken stock
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp chopped parsley
- salt + black pepper
Method
Step 1
Boil the pasta in salted water. Drain, reserving 1/4 cup of the cooking water.
Step 2
While the pasta is boiling. Heat the oil in a skillet over high heat. Sauté shrimp until just golden, about 5 minutes. Season with salt and pepper. Transfer to a plate. Add the garlic, lemon zest and fava beans to the same skillet, sauté until fragrant, about 30 seconds. Add wine, chicken stock and lemon juice. Cook over high heat until reduced by half, about 3 minutes. Whisk in butter, and season to taste with salt and pepper. Lower heat to medium and add shrimp to reheat, tossing to coat well with sauce, about 1 minute.
Step 3
Then stir in the pasta, add parsley, chili flakes and a splash of the reserved cooking water. Season with salt and lots of black pepper. Serve with grated parmesan.
