“Nuoc Cham” is a sauce in Vietnamese cuisine. This stuff is seriously addictive. Sweet, salty, spicy, tangy and filled with umami flavors, it hits all the right flavor notes and can be used as a dipping sauce for spring rolls and grilled meats.
You can't go wrong with roasted eggplant, especially when its marinated in herbaceous spice blends like Za'atar! Quick tip: Make a crosshatch with a paring knife before marinating, that way you’re able to get all those delicious flavors permeating through the eggplant.
Spend the day grilling outside and eating these chicken kabobs! Feel free to switch out the veggies with whatever you may have on hand, like mushrooms, bell peppers or red onions.

This is a chicken salad we can all get behind! Your oven does most of the work! Serve in lettuce cups, over a bed of quinoa, or with your choice of gluten free bread!
