The Pomegranate Menu 

Pomegranate is in the spotlight this week! Sprinkle the seeds into salads, on top of roasted veg, use pomegranate juice in salad dressings or even cocktails! We're starting off with granola bars for breakfast and snacking throughout the week, then move into a couple of roasted vegetable dishes, a delicious fall salad, a cozy soup and a chickpea bowl to use up anything you might have left over at the end of the week.

Za’atar Roasted Eggplant With Tahini And Pomegranate

Za'atar, a Middle Eastern spice blend of dried herbs, sumac and sesame seeds,  pairs wonderfully with roasted eggplants. Use a pairing knife to make crosshatches in the eggplants, this allows the marinade to really soak in and flavor the eggplants from the inside out. From there all you have to do is sear and roast until tender, it's really that easy!
